2/3 cup buckwheat flour, 2 tsp cacao powder, 1 tsp baking powder, pinch of salt
2/3 cup soy milk + 1 tbsp apple cider vinegar, 1/2 banana (mashed)
choc chips
soy yogurt, hemp seeds & more banana for serving
02:45 tofu muffins:
2 small red onions, 3 cloves of garlic
1 small can of corn, 1 red bell pepper
1 tsp each thyme, oregano, salt, pepper to taste
blended: 600g tofu, 1/4 cup nutritional yeast, zest from 1 lemon, juice from 1 lemon, 1 tbsp chickpea flour, 1 tsp dijon, 1 tsp curry powder, 1/2 tsp turmeric, salt & pepper (more than you think!)
*baked at 180°C for 30 minutes
05:28 pasta salad:
cooked pasta
1 block smoked tofu, cut into small cubes, fried in olive oil with smoked paprika until crispy, then deglazed with 1 tbsp soy sauce
cucumber, dill, parsley
sauce: 2 tbsp nutritional yeast, 1 heaping tbsp tahini, 1/2 tsp dijon, juice from 1/2 lemon, oregano, thyme, salt to taste, water as needed
07:40 couscous salad:
1/2 cup couscous, 1 tsp vegetable broth powder, 1 cup boiling water
brown lentils, red onion, radishes, cherry tomatoes, parsley
2 heaping tbsp pesto, zest from 1/2 lemon, juice from 1/2 lemon, water as needed
09:00 curried chickpea pockets:
1 large onion, 2 cloves of garlic, 2 small carrots, fried in oil
1/3 tsp each ground coriander, cumin, mustard seeds, 1/2 tsp each curry, garam masala, turmeric
salt & pepper to taste
2 tbsp tomato paste, 200g chickpeas
1 tbsp peanut butter (or tahini or coconut cream), water as needed
1 sheet of pizza dough
*baked at 210°C for 18-20 minutes
