Smokey tofu 'bacon':
- 250g thinly sliced tofu
- 2 tbsp bbq sauce
- 1 tbsp maple syrup
- splash of liquid smoke (approx 1/2 tsp)
- 2 tbsp olive oil
- 2 tbsp soy sauce
1. Mix all sauce ingredients together in a bowl
2. Add thinly sliced tofu pieces to the bowl, coat well in sauce and transfer to an air fryer, a lined baking tray or a frying pan
3. Cook/fry until lightly crispy (cooking time will vary depending on way of cooking)
10 mins - air fryer
20-25 mins - oven
5 minutes each side - frying pan
Creamy miso noodle soup:
Broth:
- 1 tbsp olive oil
- 1 brown onion, diced
- 2 garlic cloves, finely chopped
- 100g corn kernels, drained and rinsed
- 2 tsp white miso paste
- 1 tbsp soy sauce
- 1 cup water
- 1 - 1.5 cups oat milk (depending on how salty you want the broth)
- 1 tsp vegan chicken stock powder
To serve:
- fried asian greens, broccoli and/or puffed tofu
- sesame oil and/or chilli oil
- cooked ramen noodles
