Ingredients:
For the Base:
- 6 slices bacon, chopped
- 2 pounds (900g) potatoes, peeled and cut into chunks
- 1 head cabbage, roughly chopped
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 4 tablespoons (60g) butter, divided
- ½ cup (120ml) milk or cream
- 3 green onions, finely chopped
- Salt and pepper, to taste
- 2 cups (200g) shredded cheddar cheese (or any strong, mature cheese of your choice)
For the Topping:
- 1 sleeve Ritz crackers, crushed (about 32 crackers)
- ½ cup panko breadcrumbs (for extra crunch)
- 4 tablespoons butter, melted
- Extra cheese for topping
For the peels
- potato peels
- little oil
- salt
Bake 180 until crispy
For the Onion gravy
- onions sliced
- water
- pinch of salt
- sugar
- gravy granules or powder
Oven: Bake at 360°F (180°C) for 15-20 minutes or until golden brown and bubbling.
