水量越大,做出来的面包就越柔软蓬松。最初我开始做天然酵种面包的时候也是这样想的,但慢慢地发现,水量的多少和使用的面粉是绝对相关的。 制作面包是一个综合的过程,很多变量和影响因素,今天我们着重来看一下水量这个变量。我用同一种面粉,基本相同的方法做了三个面包,水量分别是70%,80%,100%,看完视频,结果和你想象中的一样吗? Inspired by @foodgeek 具体的制作方法可参考 极简欧包
