I am a male brain type who is very bad at doing two or more things at the same time. This time, too, I was so absorbed in separating the chicken parts that I overcooked the yakitori sauce (T_T)

Pork belly approx. 760g
12% soy sauce (75g)
6% sake (37.5g)
6% Mirin (37.5g)
5% Sugar (31g)
(Based on weight after boiling)

12 shumai (steamed pork dumplings)
400 g ground pork
1/2 onion, chopped
oil to taste
1 piece of grated shoga (ginger)
2 T soy sauce
1 T each sesame oil and sake
2 T potato starch
2 T sugar
Beans, to taste

90cc mirin
23g sugar
90cc soy sauce
