Then add your fillings to the center of the sheet. Once the paper is soft enough to fold, grab the edge that’s closest to you, fold it over the filling, then slightly pull the filling towards you. Fold in the left and right edge of the rice paper. Then roll everything up, away from you. DONE #3 Tahini Hot Chocolate 2 tsp unsweetened cocoa powder 1 tsp white tahini 1 - 2 tsp rice syrup ½ tsp vanilla (or vanilla sugar in my case) about ¼ cup (60ml) hot water ½ cup (125ml) non dairy milk plus, if you wish another ¼ cup (60ml) to froth up for some added foam → serves 1 #4 Cozy Apple Toast 1 apple, cut into chunks 1 tsp vegan butter 1 tbsp lemon juice ¼ tsp cinnamon 3 slices whole wheat bread 3-4 tbsp plain or vanilla vegan yogurt or plain vegan cream cheese a drizzle of agave or maple syrup → serves 1 Taylor Swift Bejeweled Lavender Rosé Cake: https://youtu.be/gCK8tfm8mOo The Strawberry Cheesecake Mousse, Greek Style Tacos, Quick Rice noodle Salad, Sweet Potato Muffins and Homemade Tortilla Chips are all recipes from my cookbook “All Day Vegan” - IT’S OUT NOW !! #5 Carrot Cake Muesli soy yogurt (vanilla or plain) 1 small carrot, grated ¼ tsp cinnamon muesli or cereal of choice 2 tsp maple or rice or agave syrup (or to taste) optional: added almond butter drizzle !! #6 Improvised Winter Rolls ½ can (120g = 4.2oz) chickpeas, mashed 1 tbsp olive oil 2 handfuls shredded white cabbage 2-3 tbsp vegan kimchi about ⅓ cup (about 5 tbsp) fried (oyster) mushrooms , chopped 2 tsp soy sauce 1-2 tbsp chopped chives 1 tsp roasted sesame seeds 6-8 rice paper sheets hummus for serving fresh cucumber chunks for serving #7 Lazy Pumpkin Feta “Flatbreads” 1 sheet store bought pastry dough* (Flammkuchen Style preferred) otherwise try Tarte or Pizza Dough (puff pastry MAY work - not sure but feel free to try) 150g (5.3oz) vegan cream cheese 1l red onion, thinly slices ½ small hokkaido pumpkin, thinly sliced 1-2 handfuls of store bought roasted peeled chestnuts, chopped 200g (7oz) vegan feta cheese a sprinkle of chili flakes a sprinkle of black pepper optional: 100g (3.5oz) smoked tofu, cut into cubes The baking time will vary depending on your chosen dough, however, it’ll take at least 20 minutes anyway, because the pumpkin needs to cook through first. I was fine baking it for 25 - 30 minutes (even though on the packaging it may say less time) Just keep an eye on the edges of the pie to make sure they don’t turn too dark.
