What did I eat in a day to reduce food waste? Watch and find out! Seriously tho, this is just a casual “What I Eat in a Day” with a focus on using up whatever I had left in my fridge before going to get my groceries for the week. Not only does this reduce food waste, but it saves money because you are not literally throwing money in the trash! Speaking of trash, I am really big on recycling, reusing, and composting! BUSINESS INQUIRIES: [email protected] Chickpea Breakfast Stew ½ of an onion, diced 1 can of drained chickpeas (or other bean like white, black, or butter beans) 1 can diced tomatoes or 1 ½ cups fresh tomatoes, diced About 3 cups of greens (your choice) 2 Tbsp seasoning mix of choice (I used a Cajun blend) 1 Tbsp low-sodium Tamari OR Salt and pepper to taste Sautee the onions in a little water or oil until tender Add the chickpeas (or other beans), the seasoning, and the tomatoes. Cook for 2-3 minutes. Add the greens and put the lid on to steam for about 3-5 minutes. Add a little tamari or salt and stir everything together. Serve with some hearty bread (preferably toasted) or pita, or with rice, quinoa, or couscous! Tempeh Bacon ¼ cup soy sauce ¼ cup maple syrup 1 tsp. liquid smoke 1 Tbsp. smoked paprika 1 tsp. garlic powder or granules 1 tsp. onion powder 1 (8-oz) package of tempeh Whisk the first 4-5 ingredients together in a square container (try to use one with a tight lid!) Slice the tempeh into thin strips and place in the marinade. Put the lid on the container and shake it up so all the tempeh gets coated with the marinade. Put it in the fridge for at least one hour. Air fry for 10-15 minutes (depending on if you want it crispy) at 450℉, flipping halfway. OR fry in a skillet with a little oil. Enjoy as a breakfast side, crumbled on a salad, or in a vegan BLT (TLT). Asian Style Almond (or peanut) Sauce (for Thai Salad) 2 Tbsps. Almond Butter 2 Tbsps. Soy sauce or Tamari 2 Tbsps. Rice Vinegar 1-2 tsps. Sugar (any sweetener will work) 2 tsps. Ginger paste or freshly grated ginger 1 tsp. garlic powder or granules 1-3 tsps. Chili-garlic paste (depending on how spicy you want it) Water to thin Place all ingredients except the water in a small bowl and stir to combine. Add a little water at a time and stir thoroughly until you get the consistency you want.
