what I ate this week as a uni student! striving for balance & happiness :)
🍇 recipes:
overnight oats: 2/3 cup oats, tbsp chia seeds, salt, 1 cup soy milk, 3 tbsp soy yogurt
tahini lemon soy sauce: 1 heaping tbsp tahini, 1 tbsp soy sauce, ½ lemon’s juice, grated ginger, black pepper, splash of agave/syrup, pasta water to thin (more than you think!)
other ingredients: mushrooms, bell pepper, broccoli, garlic, pasta, parsley, sesame seeds
bbq tofu: 3 tbsp bbq sauce, 2 tbsp soy sauce, pinch of smoked paprika, black pepper
lemon pasta: lemon slices, asparagus, radishes, garlic, herb salt, chickpeas, basmati rice, lemon juice, sesame oil, pepper (the lemon peel is not edible, well technically it is but it is very bitter!)
pancakes: 2/3 cup flour, 1 tbsp sugar, salt, 1 tsp baking powder, 2/3 cup soy milk + 1 tbsp apple cider vinegar, diced rhubarb, handful chopped pistachios
snacking platter details:
hummus: 1 can chickpeas, ¼ cup tahini, ½ tsp salt, 1 tsp cumin, ½ lemon, ½ cup water
cucumber salad: cucumber, pinch of sumac, salt, pepper, extra virgin olive oil
roasted: tomatoes, onion, tofu, in zaatar, salt & olive oil
other ingredients: sourdough bread, olive oil, tahin spice
*most snacks are not included in this video
