⭐ INGREDIENTS & NOTES ⭐
#1 Biscoff Tahini Toast + Cinnamon Iced Latte

2-3 slices of bread
biscoff spread
banana slices
drizzle of white tahini
toasted sesame seeds
optional: drizzle of cinnamon sugar syrup
→ serves 1
for the Cinnamon Sugar Syrup:
1 cup brown sugar (200g)
1 cup water (250ml)
1 ½ tsp cinnamon
3 tsp vanilla extract or 10 ish vanilla aroma drops

→ stored in a jar with a lid, the syrup will last for about 3-4 weeks in the fridge
for the coffee drink:
2 shots espresso (instant or regular)
2- 3 ice cubes for the espresso jar
more ice for your cup
1 - 2 tbsp of the cinnamon syrup (or to taste)
non dairy milk of choice (how much depends on your taste)
#2 Marzipan Overnight Oats

1/2 cup rolled oats (50g)
pinch of salt
a few drops almond aroma
1 scoop protein powder (vanilla, chocolate, cookie, caramel…)
1 tbsp chia seeds
3-4 tbsp soy yogurt (plain or vanilla)
1/3 cup non dairy milk (80ml), more for serving if needed
1-2 tsp agave or maple syrup
1-2 tbsp chocolate chips or cocoa nibs
top with fresh fruit in the morning
→ serves 1
#3 Thyme & Mushroom Toasts

1 tbsp vegan butter
1-2 cloves garlic
2 handfuls cremini mushrooms (~150g = 5.3oz)
2-3 twigs (?) of fresh thyme (feel free to remove them before serving)
salt, pepper to taste
for serving:
2 slices bread
vegan butter or hummus
optional: sesame seeds, fresh herbs
→ serves 1
#4 Gochujang Scrambled Tofu

200g (7oz) plain firm tofu
1 ½ tbsp cornstarch/wheat flour
generous pinch of salt
1 tbsp white wine vinegar
2 tbsp unsweetened soy yogurt
½ tsp yellow mustard
little bit of oil for the pan
½ tbsp gochujang paste (or to taste, start with 1 tsp if you’re not too good with spice)
¼ cup hot water (60ml)
→ yields enough filling for 1-2 wraps
for each wrap:
1 medium tortilla
layer of hummus
layer of fresh spinach
tofu scramble
spring onion
sesame seeds
yogurt sauce (2 tbsp unsweetened soy yogurt, 1 tsp olive oil, 1 tsp white wine vinegar, salt pepper)
#5 Matcha Yogurt Bowl

for the pan fried granola:
½ banana, mashed
½ cup oats (50g)
2 tsp chia seeds
pinch of salt
1 tbsp unsweetened cocoa powder
1 tbsp agave syrup (or to taste)
1 tbsp coconut oil/sunflower seed/vegan butter for the pan
1 cup vegan yogurt (250ml)
1-2 tsp agave (or to taste)
½ tsp matcha powder
→ whisk until smooth!
→ serves 1
#6 Protein Cookie Dough

½ cup thick vegan yogurt (125g)
1 tsp vanilla or a few vanilla aroma drops
pinch of salt
2 tbsp nut butter (peanut, almond, cashew)
½ cup ground almonds (60g)
1 tbsp brown or coconut sugar (or to taste)
1 scoop of your favorite protein powder
1-2 tbsp dark chocolate chips (or cocoa nibs)
→ serve with fresh fruit
→ serves 1
