Piti is one of the main national Azerbaijani lamb soups, cooked in a clay covered pot over charcoal. It's delicious and very healthy. We use lamb, tail fat, chestnuts, chickpeas and dried plum when cooking it. Also seasoning everything with a lovely saffron. It tastes terrific!
