A very British invention, that came from a Chinese takeout in Liverpool (or so the legend goes), many people will disagree with this, but I'd say most people in the Chinese takeaway industry agree its came from up north somewhere, I actually wonder if this has made its way over to the US yet? This recipe is going to be totally different from the way a Chinese takeaway will make them, not so much the seasoning and herbs etc, but the fact we're showing you how we did our triple cooked chips when we did, we used to have people come across country to just try them, or come back to have them again. The key is give them the time they need, if you do, they will be amazing. We don't add MSG to the water when blanching the potatoes because it causes them to brown very quickly, and because they're so thick and chunky, they need a lot of time in the fryer, on a mega high heat, so you need to keep that from browning as much as possible. The chips we make in this video, aren't the really version we used to make, there a short cut version, we just don't have that time to film for 4 days in a row, in fact we have 1 day, as we work all other days of the week, the triple cooked chips are still amazing, but only as half as good then the ones we used to make.
