Ingredients (Diana Aw)
1. Pork belly 500g, cut thick slices
2. Ginger, smashed (to boil with pork)
3. Ginger few slices
4. Garlic 3 cloves
5. Star anise 1pc
6. Cinnamon stick 1pc, smashed
7. Bay leaf 1pc
8. White pepper, some
9. Hard boiled eggs 3pcs
10. Bean curd 3pcs
Seasoning
1. 100ml light soya sauce
2. Dark soya sauce
3. Small rock sugar 20pcs
Method
1. Place the pork belly and ginger in a wok of cold water. Turn on heat and bring to boil for 1min. Then transfer the pork to a pot of cold water. Discard the ginger. Set aside
2. Deep fry the bean curd till golden brown. Set aside
3. Heat the pot and add little oil. Fry the ginger slices till aromatic. Add in pork belly and ingredients 4-8. Stir fry under high heat till oil extracted. Add in dark soya sauce and stir fry till aromatic. Then add water enough to cover all the ingredients.
4. Add light soya sauce, rock sugar and bring to boil. Add eggs and bean curds and mix well. Cover with lid and turn to low heat. Simmer for an hour
5. Serve and enjoy! 💕
