Cover the bowl and let the dough ferment at room temperature for 12-16 hours (overnight works well). 3. After fermentation, begin stretching and folding the dough every 30 minutes, for 3-4 times. 4. Once the dough has been stretched and folded, place it in the fridge for cold fermentation overnight or longer. 5. When you’re ready to bake, preheat the oven to 425°F (220°C) and heat your Dutch oven for 15 minutes. 6. Take the cold dough out of the fridge just before baking. Shape the dough into a round loaf, then score the top with a sharp knife or razor blade to help the bread expand during baking. Place the scored dough on a piece of parchment paper and carefully transfer it (with parchment paper) into the preheated Dutch oven. Place the lid on. 7. Bake for 35 minutes, then remove the lid and bake for another 15 minutes, or until golden brown and crispy. 8. Let the bread cool before slicing.
