#winter #slowliving #cozy The weather during the last week of January was windy, rainy and grey. I spent the majority of this stormy period cozy inside and pottering about our home. This kind of weather is perfect for lighting the fire, eating hot soup and relaxing with a good book and a nice hot drink. Sometimes an uneventful week is needed to get those little odd jobs that have been put off, done. Our bodies are tuned to slowing down during winter and taking it easy, something that is underrated in this day and age (Including by myself). So I have tried to take it easy when the opportunity arises. The end of the month also means stretching the cupboard staples until payday! I’ve chosen to make rice pudding, very easy, very affordable and very sweet! I hope you enjoy this weeks instalment of our quiet life in this beautiful little corner of the world! Rice pudding recipe 175g rice 410/tin of evaporated milk (if using, I used a can of condensed which yields a slightly different, although not unpleasant taste) 850ml milk (I used soy) 40g caster sugar Sprinkle of cinnamon. The recipe actually asks for 1 whole nutmeg, but that isn’t something I have knocking around the cupboards, so I went with cinnamon as it’s a spice that seems to suit this sort of baking. 25g butter Stick it all in an oven proof dish and then into the oven on 150C (302F) and cook for at least 2 hours. I ended up cooking closer to 3 hours as my rice was still hard. You might have to add more milk if baking for longer, if you desire it. Rice pudding can be created on the hob as well in half the time, and there’s lots of recipes out there that do this.
