Quick Pickles
Pickled fruits and vegetables add such an exciting element to any dish. Whether you are looking to bring in some spicy, sharp and pungent kicks, or soft and subtle hints, the combinations are endless and so much fun to discover. With a few household ingredients, some leftover produce and about 15 minutes time, you can start experimenting in your own kitchen!!
Quick Pickle Recipe:
• 1 cup water
• 1 cup vinegar
• 1/3 cup sugar
• 1 T salt
• 3 sliced garlic cloves
• Your choice of vegetable
• 2 tsp coriander (optional)
• 2 tsp dried dill (optional)
• Fresh cracked pepper
• 2-3 cups vegetable or fruit (sliced cucumber, cherry tomatoes, carrot sticks, radish, onions, beets, plums, apple, berries etc)
• Other aromatics that you can include: sliced hot peppers, ginger, horseradish, other herbs or spices, fennel, clove, cinnamon stick etc
Bring liquid and aromatics just to a boil and removed from heat. Pour over sliced vegetables (in glass bowl) and stir. Make sure that the liquid covers the vegetables so that they are completely submerged. Let cool on the countertop and then refrigerate. The flavor will develop the long it sits, but they are ready to use in about 2 hours! Have fun experimenting with different vegetables (or fruits!) and aromatic combinations. It is ENDLESS. And delicious:)
