Learning to slow down again before Autumn comes. These last days of August, the time between summer and autumn, often feels quite strange and difficult to me. I took a break for almost the entirety of August for that reason. I had my birthday and turned 30, and I must say these first weeks have been rather difficult. Shop my prints: www.dariamundi.com Join me on Patreon for more exclusive updates: https://www.patreon.com/PoetryOfSlowLife _____ Upside-down Nectarine Cake Recipe: 100g of butter (or vegan butter - I like Naturli Organic Vegan Block) 100g brown sugar 3 eggs 3 tbsp of yoghurt (plain yoghurt or thick soya yoghurt - I use Alpro Greek Style) 1 tbsp Vanilla extract 150g flour Cinnamon 1 tsp baking powder 3 nectarines (or you can use any other fruits or berries. You can also use apples, but if you decide to use them then stew them until soft first) 2 tbsp maple syrup Use room temperature butter and whisk together with sugar until creamy. Add eggs one by one and whisk until well combined. Then add yoghurt and vanilla extract and mix. Add flour (make sure you sieve it, as it helps to make the cake fluffier!), baking powder and cinnamon. Mix with a whisk or spatula until combined. Line a non stick cake tin with baking paper (mine is about 15cm in diameter or 6 inch), coat it with oil. Cut nectarines in slices and line the bottom of the pan. Pour maple syrup on top and sprinkle with extra cinnamon. Pour the batter on top. Place into a preheated oven at 180C/ 356F for 40 minutes. Pierce with the toothpick to check if it's ready - the toothpick should come out clean. Let the cake cool a bit and then turn it fruit side up to serve. If you're using any other fruits and berries, repeat the same steps as with nectarines.
