On a Budget | Simple and Delicious Meals with 5 Ingredients or Less 🛒🥬
Do you ever read a recipe from a blog and realize there's like five or six ingredients you don't have and may not use again apart from that recipe? Well I do! 🙋🏻 And while a love indulging in a fancier flavourful recipe once in awhile, most days I like to keep it simple. This video has a week of easy and delicious meals with only 5 ingredients or less. I don't include things like salt & pepper, olive oil and everyday spices in the 5 ingredients. It not only helps if you're on a tight budget like me, but also if you need a quick meal and if you're looking to eat less meat and more plants since these are all 100% vegetarian and some vegan 🌱 I hope you try some out and I'd love to hear what are your go-to five ingredient or budget-friendly meals!
Meals (in order!):
Peanut Noodle Stir Fry with Tofu 🍜
- 1/2 block of tofu
- Peanut butter
- Bell Pepper, broccoli or veggie of choice
- Rice noodles or noodle of choice
- Soy sauce
Optional add ons: cornstarch, sriracha, sesame seeds
Sweet Potato & Black Bean Quesadillas 🫘
- 1 Medium sweet potato
- 1 Can of black beans
- Cheese
- Tortillas
- Bbq sauce or dip of choice
- Recommended spices: Paprika, garlic powder, cumin, chilli powder, salt, pepper, sriracha
Optional add ons: hot sauce, sour cream
Fried Cauliflower Bites 🍋
- 1 Cauliflower
- 2 cups flour
- 1 can sparkling water, beer, or citrus flavoured soda
- Baking Powder
- Canola or Vegetable Oil
- Spices: Paprika, Lemon & Herb seasoning, salt, pepper
Optional add ons: Buffalo Sauce, Bbq sauce of choice
Buffalo Tofu Wrap 🌯
- Tortillas
- Tofu
- Lettuce
- Cucumber
- Buffalo Sauce
Optional add ons: cornstarch, salt, pepper, cheese
Roasted Sweet Potato & Chickpeas Kale Bowl 🥗
- 1 Large sweet potato
- Kale
- 1 Can of Chickpeas
- Mayonnaise or Plain Yogurt
- Lemon
- Spices: Chilli powder, Paprika, Garlic powder, Salt, Pepper, lemon & herb
- Olive oil & garlic
Optional add ons: cucumber, sriracha, additional sauce
Sausage & Spinach Pizzas 🍕
- Flatbread
- Veggie sausage or your protein of choice
- Spinach
- Cheese
- Tomato Sauce
Spices: Dried Oregano, Dried or fresh basil, pepper
Garlic Tomato Veggie Beef Pasta 🍝
- Pasta of choice
- Spinach
- Tomato/Garlic Pasta sauce
- Veggie Beef or protein of choice
- Optional: Nutritional yeast, Cheese, Chilli flakes
Grocery List:
- 1 x block of tofu
- 1 x veggie beef
- 1 x pack of veggie sausage
- 2 x sweet potatoes
- 1 x bag of spinach
- 1 x lettuce
- 1 x bag or bunch of kale
- 1 x bell pepper
- 1 x block or bag of shredded cheese
- 1 x cauliflower
- 1 x cucumber
- 1 x lemon
- 1 x box of pasta/4 portions
- Rice noodles or noodles of choice
- 1 x bag of flatbreads or pizza dough
- 1 x bag of tortillas
- 1 can of chickpeas
- 1 can black beans
- 1 x can tomato sauce/pasta sauce
- Sparkling water (only 1 can needed)
- Buffalo sauce or sauce of choice
Pantry staples needed: flour, cornstarch, baking powder, salt, pepper, canola or vegetable oil, paprika, chilli powder, garlic powder, garlic, mayonnaise or plain yogurt, soy sauce, peanut butter, sriracha
All of this cost roughly $60-70 CAD and we spend about $100 per week on average on groceries for two people. Many of these things like pasta, sauce, noodles, tortillas, flatbreads and lettuce gave extra meals as well of course!
