Heat Fortune oil, then add tofu and fry until crisp. Set aside. 2. Cut up the chicken skin. Add into the food processor along with chicken fillet, beef, garlic, salt, sugar, stock powder, and pepper. Blend until smooth and sticky. 3. Add the ice cubes in. Blend, then add the egg whites and fried shallots. Blend again. 4. Add the tapioca flour. Blend until the dough comes together, then transfer into a piping bag. 5. Scrape some tofu out, then pipe the dough into the tofu. Use a fork to make it neat. Repeat until finished. 6.
