BROWNIES
6.6 ounces bittersweet chocolate
1 stick unsalted butter
5.55 ounces confectioners’ sugar
2 large egg yolks
1 teaspoon kosher salt
2 teaspoon vanilla extract or paste
6 ounces all-purpose flour
FUDGE FROSTING
4 tablespoons unsalted butter
1½ cups (300g) sugar
2 tablespoons unsweetened cocoa powder
¾ cup whole milk
Generous pinch of kosher salt
1 teaspoon vanilla extract
1½ ounces unsweetened chocolate
BROWNIES: Preheat the oven to 350°F. Lightly butter the bottom and sides of a ¼ sheet pan. Line the bottom and two longer sides with a piece of parchment paper, smoothing to eliminate air bubbles. Melt chocolate and butter in a large bowl set over a double boiler, stirring often with a flexible heat-proof spatula. Remove from the heat and add the sugar, yolks, salt, and vanilla and whisk vigorously. Add the flour and fold thoroughly with the spatula until you have a homogenous dough. Spread into the prepared pan with an offset spatula in a smooth, even layer. Bake in a water bath until the brownies are set, 18 to 22 minutes. Remove from the oven and let cool completely.
