Ingredients (Diana)
1. Shiitake mushroom (dried) 200g
2. Spring onion few stalks
3. Ginger few slices
4. Fragrant oil
Seasoning
1. Sugar 2tsp
2. Oyster sauce 2 tbsp
3. Salt 1 tsp
4. Light soya sauce 2tbsp
Method
1. Soak the mushroom with running water and place a plate on top so that it’s totally submerged in the water. Leave in the fridge overnight
2. Cut away the stalk and drain away the water
3. Boil the mushroom in a pot of water for 10min and drain well
4. Heat pot with fragrant oil and stir fry the ginger and spring onion till fragrant. Add in oyster sauce and stir till fry. Then add mushrooms and mix well. Add water, enough to cover the mushrooms. Add sugar, salt and light soya sauce. Bring to boil.
5. Once boil, turn to low heat and simmer for 45min
6. Remove the top layer of oil and dish up the mushroom. The mushroom soup can use for seasoning for vegetables and soup.
