Join me as I make croissants and serve breakfast like in Paris ;) __________________________________________ YEAST CROISSANTS RECIPE INGREDIENTS: • 600 g of plain flour • 30 g of fresh yeast • 250 ml of milk (I use soy milk) • 125 g butter (lactose-free) • 5 tablespoons of sugar • pinch of salt • 3 eggs • Option: for brushing: egg yolk + 1 tsp of milk = 24 medium croissants (in the video I cut the dough into more pieces as I like small croissants) HOW TO MAKE: • Put the yeast in a cup and pour 50 ml of warm milk. Add a teaspoon of sugar, 3 tablespoons of wheat flour and mix. Set aside for about 10 minutes to rise. • Add the butter cut into cubes to the remaining warm milk and heat gently (it should be slightly warm). • Pour flour, salt, and sugar into a large bowl and mix. Make a well in the middle, pour in the yeast mixture, and start mixing the ingredients gently. Add the eggs, then gradually pour the slightly warm milk and butter, stirring slowly with a spoon. • Knead the dough in a bowl for 10 - 15 minutes until it is smooth and elastic. Cover with a cloth and set aside to rise for 45 minutes. • Take it out onto a floured board and combine it into a smooth ball, kneading the dough for a while. Divide into 3 parts. Roll out the first part into a cake approximately 30 cm in diameter. Sprinkle with flour if necessary. Cut into 8 triangles. • Fold the croissants starting from the base of the triangle. You can add the filling in advance: at the base of the triangle, place a spoonful of apples or cheese filling or 2 cubes of chocolate. • Place on 2 baking trays lined with baking paper, leaving space between them. Set aside for about 20 minutes to rise. - Option (which I do not apply) - Use a brush to brush the top with beaten egg yolk and milk if you like croissants with a glaze look. • Preheat the oven to 180 degrees C. Place the first tray with croissants and bake until golden brown for about 18 minutes. Bake the remaining croissants.
