Pour on a tray with baking paper. 3. Cook in middle of the oven at 200°C / 392°F for about 20 minutes. 4. Cut and chop paprika in small pieces. 5. Shred the cheese, unless buy pre-shredded. 6. After 20 minutes, take the tray out but don't turn off the oven. Check around edges so it is not stuck. 7. Sprinkle ham strips, paprika and cheese on the omelette. Save some of the cheese. 8. Roll the omelette and sprinkle the cheese you saved on top. 9. Put back into the oven and cook until the cheese have melted. Serve with for example sauerkraut, arugula, spinach or any salad you prefer. Recipe Mustikkapiirakka (blueberry/bilberry pie) 75g / 2.6oz melted butter 0.5dl / 45g / 0.2cups / 1.6oz sugar 1 egg 2.5dl / 140g / 1 cup / 4.9oz oat flour 1 tsp baking powder 0.5 tsp ground cardamom Filling: 200g / 7oz frozen bilberries 2 tsp potato flour 200g / 7oz sour cream 1 egg 0.5dl / 45g / 0.2cups / 1.6oz sugar 1 tsp vanilla sugar 1. Melt the butter. 2. Add sugar and egg to the melted butter and mix. 3. In a separate bowl, mix oat flour, baking powder and ground cardamom. 4. Add the dry ingredients to the liquids and mix to a loose, spreadable dough. 5. Spread the dough on a pie pan, you can grease the pan first so it doesn't stick. 6. Mix bilberries with potato flour. 7. Pour the berries on the pie dough and spread them out evenly. 8. Mix sour cream, egg, sugar and vanilla sugar and pour it over the berres. 9. Bake in lower part of the oven at 180°C / 356°F for 35 minutes. If the pie crust seems to get dark you can cover the edges with foil.
