Thank you for your support ❤️ - - - - - - - - - - Finnish Salmon Soup 4 servings 4-5 potatoes, chopped 2 carrots, chopped 1 large onion, finely chopped 1 salmon fillet (or several if buying small ones like I did) salt 2 dl cooking cream butter 1-2 bay leaves 1 bouillon cube (fish or vegetable) fresh dill Remove the skin from the salmon and cut it into bite size pieces. Peel and cut potatoes, carrots and onion. Add vegetables to a pot and fill up with water until covered. Add the bouillon cube and bay leaves. Cook until potatoes and carrots are soft and then add the salmon and continue cook until it is done, skim the foam with a slotted ladle or spoon. Add cooking cream and butter. Taste and add salt if necessary. Sprinkle fresh dill on top of the finished soup. Serve with rye bread or crispbread. Recipe with own broth from whole salmon: Broth Salmon, remove fillets and gills (just use the head and scraps) Water, until the fish is fully covered 2 carrots 1 large onion 1-2 bay leaves Also 4 large potatoes, chopped 2 carrots, chopped 1 large onion, fine chopped 1 salmon fillet salt 2 dl cooking cream knob of butter fresh dill Put the salmon head and scraps in a pot, make sure that the gills are not involved. Fill with water until covered completely. Let it boil until foam forms on the surface. Skim the foam with a slotted ladle or spoon. Add the peeled carrots and onion, as well as bay leaves. Let it boil slowly for about 15 minutes. Strain the broth. Put the broth back into the pot and add the peeled and chopped potatoes, carrots and chopped onion. Let it boil slowly until they soften a little. Remove the bones and skin from the salmon fillet and cut it into bite-size pieces. At the end, add the fish and let it boil slowly until the fish is cooked. Add cream and a knob of butter. Taste and add salt if necessary. Sprinkle fresh dill on top of the finished soup.
