Ingredients
For the Chili:
- 1 lb (450g) chicken breasts
- 1 tbsp olive oil
- 4 garlic cloves, minced
- 1 small onion, diced
- 1 – 2 chopped jalapeno
- 1/4 cup BBQ sauce (your favourite brand)
- 1/4 cup ketchup
- 3 tbsp brown sugar
- 3 tbsp apple cider vinegar
- 2 tbsp Worcestershire sauce
- 2 tsp yellow mustard
- 1 (15 oz) can cannellini beans, not drained
- 1 (15 oz) can of kidney beans, not drained
- 1 (15 oz) can pinto beans, not drained
- 1 tbsp mesquite liquid smoke
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp chipotle powder (or 1 chopped chipotle in adobo) (optional for heat)
- 1/2 tsp ground coriander (optional for depth)
- 1 (14.5 oz) can low-sodium chicken broth
- 1 tbsp butter (optional, for a silky finish)
Toppings (Optional):
- Sour cream
- Tortilla chips or Fritos
- Chopped green onions
- Fresh cilantro
- Shredded cheese
