Strawberry Lover’s Sugar Cookies - original recipe from https://thelazyveganbaker.com/recipe/strawberry-lovers-sugar-cookies ( I made a few tweaks here and there ) 1 cup vegan butter 1/2 cup + 3 tablespoons sugar 1/4 cup packed light brown sugar 2 tablespoons aquafaba 1/2 teaspoon vanilla bean paste 2 cups all purpose flour 1 teaspoon baking powder 1/4 teaspoon salt (omit if aquafaba is salted) 2 1/2 tablespoons powdered freeze dried strawberries Glaze 2/3 cup powdered sugar 1/2 tablespoon powdered freeze dried strawberries 1 1/2 tablespoons plain non-dairy milk In a large bowl, beat the butter, 1/2 cup sugar and light brown sugar until light and fluffy, 1-2 minutes. Add the aquafaba and vanilla. Beat until just combined. Add the flour, baking powder and salt, mixing carefully until completely combined. Stir in the powdered freeze dried strawberries. Chill for a minimum of 1 hour in the refrigerator. Preheat oven to 350F. Line two baking sheets with parchment paper. Roll the cookie dough into 1" balls and then roll in the 3 tablespoons cane sugar. Arrange balls on cookie sheet and flatten slightly bottom of a glass covered in sugar. Bake 12 minutes. Remove from oven and let cool. To make glaze: Whisk together glaze ingredients until smooth and completely combined. When cookies are completely cooled, use a piping bag and spread glaze over them and let sit at room temp until glaze set. Store in an airtight container at room temp 4-5 days or in the refrigerator for up to 10 days or freeze.
