Delicious Ukrainian Crepes with Sweet Cottage Cheese
Ukrainian crepes filled with sweet cottage cheese @MatusyasKitchen are perfect for breakfast, lunch, or dessert! Soft, with creamy filling, and lightly baked to perfection, these crepes (also know as "nalysnyky" in Ukraine) are easy to make and just irresistible. Top with fresh strawberries and a dollop of sour cream for the perfect finishing touch!
Ingredients:
For 16 crepes:
400 g flour, 460 g milk
330 g water, 4 eggs
4 tbsp vegetable oil
1 tsp salt, 1 tbsp sugar
Cottage cheese filling:
500 g cottage cheese
1 egg, 1 tbsp vanilla sugar
1-1.5 tbsp sugar
6-8 strawberries for decoration
Instructions:
1. Add sugar and salt to the eggs. Beat the eggs with an electric mixer until well combined.
2. Gradually add flour, lukewarm milk and water, and continue to blend. Stir in the vegetable oil.
3. Beat the batter until it is smooth, without any lumps.
4. Let the batter rest for 20 minutes.
5. Meanwhile, prepare the filling: add an egg, vanilla sugar and sugar to the cottage cheese and mix and mash well.
6. Pour the batter into the preheated skillet and fry the crepe for about 1 minute on one side. Flip it over and cook for another 30 seconds. Transfer to a plate and coat with butter.
7. Spread the filling evenly, roll up the crepe, and cut it in half. Place on a baking pan.
8. Place in a baking pan, cover with foil, and bake at 400°F for 15 minutes.
9. Slice the strawberries and use them to decorate the crepes.
10. Serve with sour cream.
