这款霸王蛋黄酥,香酥的饼皮里包裹着肉松,麻薯,红豆馅和咸蛋黄,咸中带着微甜,外层的酥皮层次感分明,酥脆掉渣 。 算得上是蛋黄酥里的霸王。

酥皮不破酥的几个要点:
- 由于馅比较大,油皮要稍微软一点
- 擀压的时候,蘸一点点面粉可以放置破皮,要擀压得非常轻柔,不能太用力
- 每次的松弛做到位,不能偷懒节省时间省略了松弛
- 面团必须要用保鲜膜盖好,以免表面干化

This flaky Salted Egg Yolk pastry is filled with pork floss and mochi, red bean paste and salted egg yolk, with a hint of sweetness and salt. It is a nice present for your friends and relatives on this Mid-Autumn Festival.
Key points :
- The water-oiled pastry can be a bit soft
- Dust with a bit of flour while rolling out the dough, roll gently
- Have enough rest
- Cover the dough with plastic wrap to avoid the surface drying out
