Sweet Potato & Lentil Dhal Recipe (Slow Cooker) Ingredients: 2 tbsp oil 2 onions, finely chopped 2 garlic cloves, minced 1 tsp turmeric 1 tsp cumin 1/2 tsp chilli flakes 1 tbsp curry paste 300g red lentils 1 large sweet potato, cubed 1 litre hot veggie stock Fresh parsley for garnish Instructions: Heat the oil in a pan and fry onions until caramelised (8-10 mins). Add garlic, turmeric, cumin, and chilli flakes. Stir well. Add curry paste and mix. Transfer this mixture to the slow cooker. Add red lentils, sweet potatoes, and half the stock. Stir. Cook on low for 6-8 hours or high for 4-5 hours, adding the remaining stock halfway. Stir occasionally and season to taste.
