Sourdough Bread recipe and Foccacia:
Directions:
Mix starter and water until milky looking.
Add flours and mix until sough is shaggy. Cover and rest for 20 minutes.
Add salt and 40g of water. Mix again.
Cover , stretch and fold every 30 minutes. For the next 2 hours. Until doubled in size.
Cut into 2 pieces.
Drizzle olive oil on sheet pans. Stretch dough out into rectangles but retain bubbles. Poke holes into dough with fingers. Drizzle with oil and sprinkle toppings.
Bake at 400 degrees for 2 5 minutes or until golden brown.
Serve for breakfast, lunch , or dinner!
Sourdough:
225g starter (bubbly)
720g warm water
800g all purpose white flour
200g whole wheat bread flour
25g sea salt
40g water separately
Foccaccia:
2 garlic cloves minced
olive oil
fresh basil minced
