Apple Butter (this is a large recipe - I got 18 pints canned):
22 lbs cored, cut up apples
6 cups brown sugar
3 cups granulated sugar
7 tablespoons ground cinnamon
1 1/2 tsp salt
3/4 tsp ground cloves
15 T vanilla extract (yes, you read that correctly - don't knock it until you try it 😉)
1/2 T nutmeg
Core and roughly chop up apples (do not peel). Mix with all the spices, sugars, and vanilla. Simmer on low heat for 10 hours, stirring occasionally. Scoop the mixture into a blender and blend until smooth. Pour into jars and refrigerate or can. To can, I just wiped the rims of my jars with vinegar, then put the lid and ring on and baked at 225 for 30 mins.
