300mL water or stock
½ squash
½ onion
½ potato
enoki mushroom & green onion for garnish

300g tofu, medium firm
2 tbsp vegetable oil
2 cloves garlic, minced
1 knob ginger, minced
2 scallions, finely chopped
1 ½ tbsp pixian doubanjiang
1 tbsp chili flake (I used gochugaru)
1 tbsp black bean paste
1 tsp sichuan pepper corn
½ cup broth or water
1 tbsp shaoxing wine
1 tbsp potato starch
