(1) Shrimp Cocktail. This is the New Shrimp Cocktail you're been waiting for! The shrimp or prawn cocktail is making a comeback! And with good reason, everyone loves them. This version is a little different to the original British one, having a slight Asian accent, it's so delicious! Although there’s a lot to this recipe, you can cut corners by buying ready made mayonnaise and cooked prawns. But if you’re doing a dinner party, please, please, go the extra steps, it’s well worth it and doesn’t take much longer. The secret of course is the quality of the seafood, buy the best you can afford and try and select the largest shrimp or prawns you can find. For some reason, larger shrimps are better in flavour. You can prepare everything the day before and assemble when ready. A great, refreshing dinner party starter, everyone will love. Enjoy my shrimp or prawn cocktail.
(2) Rib eye with Red wine jus. The ultimate cut of meat with a shallot and red wine reduction jus. The rib eye is a tender cut of beef with great flavour due to the marbling of fat. It's more common to have the bone removed in US. In Australia, it's also known as Scotch fillet without the bone. This recipe uses the juices from the meat, reduced red wine, shallots and beef stock. The jus is thickened with butter for that creamy flavour. Quick to make and will please any steak lover. Definitely the Best steak to pan fry.
(3) Chocolate mousse. This is the French version of chocolate mousse, a decadent chocolate dessert for special occasion. It's airy in texture making it light and fluffy but still very rich. Known in French as Mousse au Chocolat. NOTE: This recipe uses raw eggs, when using raw eggs in recipes, it's advised to buy the freshest free range eggs you can find. I've used and eaten raw eggs my whole life and never had any issues. If concerned, then I would advise not to make this recipe.
(4) Mushroom Risotto. Risotto is traditionally a Northern Italian dish, it’s made using a high starch rice such as Arborio or Carnaroli and other rounded short grain rice. Arborio seems to be the most popular although a lot of Chefs will favour Carnaroli as it’s less likely to get overcooked and retains the al dente texture. For this recipe I used Arborio, which works very well and absorbs the liquid easier. The key is to not overcook it, just like a good pasta you want that firm bite and not a soft mash that can result in being gluey.
(5) Seafood Pasta. Easy Restaurant quality meal everyone loves! Seafood pasta is a classic dish that is popular all over the world. This French-style recipe uses a variety of seafood, including shrimp, mussels, scallops, and fish, in a creamy sauce. It's relatively easy to make and a great special occasion dish. I like to make my own fish pasta to elevate it to a new level. There's something magical about fresh homemade pasta. See my pasta recipe for more. If you don't have time, buy some dried linguini or fettuccini. The mussels act as a seafood stock which will flavour the whole dish. The dish is sure to impress your guests. This recipe is a delicious and elegant way to enjoy seafood. It's perfect for a special occasion or a romantic dinner for two. Enjoy!
(6) A French classic dessert with vanilla bean and caramelised sugar.
Crème brûlée has been traced back in French cooking books as far as 1691. It's always been a great example of a classical and delicate dessert. It's easy to prepare with few ingredients. It's basically a baked egg custard with a brittle crust of caramelised sugar, brought to a higher level. If you enjoy any type of custard I guarantee you will find Crème brûlée the dish to die for. One of the world's best desserts.
